My friend Libby introduced me to this, and it always seems to take me much less time to eat this than to make it, even though it is easy to make.
Note this recipe can very easily be scaled up (just multiply all ingredients by 2, 3, or 4), and you can change the relative quantities depending on your tastes.
- 1 ripe avocado, peeled, pitted and diced into smallish chunks
- 1 ripe tomatillo, diced into smallish chunks
- 4 scallions, whites plus about 4 inches of the greens sliced very thin crossways (in the short direction)
- 1 juicy lime
- kosher salt (to taste)
- 1/2 loose cup of whole cilantro leaves, well washed and then chopped
Throw all this in a bowl.
Adjust to fit your taste. (More lime? More salt?)
